what is draft beer?
Beer can be divided into draft beer and cooked beer according to the production method. Draft beer refers to beer that has not undergone traditional high-temperature sterilization. This type of beer is generally sold locally, and the storage time should not be too long. Therefore, many draft beers on the market are in barrels. Cooked beer is a beer that has been sterilized and has a longer storage time. With the gradual maturity of beer brewing technology, beer production companies in Japan, the United States and some European countries have used advanced aseptic filling and low-temperature membrane filtration and cold sterilization technology to replace the traditional filling and heat sterilization process to produce draft beer. Draft bottled beer with a longer shelf life is available.
Pure draft beer is beer that has not undergone instant sterilization or has not been pasteurized after packaging. Pure draft beer is prepared through strict aseptic filtration and aseptic control is achieved throughout the production process. Cooked beer is sterilized by pasteurization, while draft beer is sterilized by microporous membrane filtration, that is, cold filtration. Therefore, draft beer is more fresh and refreshing than cooked beer.
Raw beer and cooked beer are mainly different in the process of sterilization. Draft beer defined by the national standard refers to beer that has not been pasteurized or instantaneously sterilized, but is sterilized by physical methods to achieve a certain biological stability. Cooked beer is sterilized by heating to extend the shelf life, but loses the fresh taste of beer; while draft beer is sterilized through microporous membrane filtration to meet the quality requirements, and the taste and nutrients have not changed.
In terms of nutrients, draft beer is more nutritious than cooked beer, and the appearance, smell and taste of draft beer are better than that of cooked beer. Draft beer has lighter color, better clarification and transparency, brighter appearance and more beautiful appearance; it retains enzyme activity, which is conducive to the decomposition of macromolecular substances; it is richer in amino acids and soluble proteins and has better nutrition. In addition, beer also contains a variety of antioxidants, and some beers will add a small amount of vitamin C due to brewing needs. Draft beer is divided into pure draft beer and ordinary draft beer. The shelf life of pure draft beer can be up to 180 days; although ordinary draft beer has not been sterilized by high temperature, it uses diatomaceous earth filtration, which can only filter out yeasts, and other bacteria cannot be filtered out, so its shelf life is generally 3― 5 days. The draft beer that is usually drunk is a kind of ordinary draft beer, which has a refreshing taste when fresh; once it has a sour taste, it indicates that it has deteriorated and cannot be drunk.
